What to expect
The visit begins with a warm welcome in the farm shop, where you will return for the tasting and to purchase the product if you wish. The tour guide will tell you about the history of the family and also about Parmigiano Reggiano, explaining the production process and the traditions surrounding it. Until 9:00 a.m., you can also see the moment when the freshly made wheels are removed from the vats.
During the tour, you will see the large copper vats where the milk is transformed into curd. It is fascinating to understand how cheese is made and the care with which it is handled.
You will also see the room where the wheels rest for the first three days after production, before being placed in brine for weeks.
Continuing on, you will see the warehouse where the cheeses mature on wooden shelves, called "scalere."Here, the tour guide explains the importance of aging and how cheese develops its unique flavor over time.
After visiting the cheese factory of your choice, you can decide whether to go to the barn to see the starting point of our production process, where the cows are milked, what they eat, and see the newborn calves.
Finally, the visit ends with a tasting of different ages of Parmigiano Reggiano, paired with local wine or balsamic vinegar, with a selection of cold cuts and tigelle (crescentine), a typical Modena bread. It is the perfect time to appreciate the different nuances of flavor and share the experience with other enthusiasts.
